Healthy Oatmeal Breakfast Cookies (Gluten free!)

I have been trying to get my husband to eat breakfast before work for years. I've tried to emphasize the importance of starting off your day with a quick nutritious meal, but it has always fallen on deaf ears. There are plenty of quick breakfast options on the market (e.x. granola bars), but they are all packed with sugar and carbs and don't offer much in the way of actual nutrition (fiber, protein, etc). This gave me the idea to investigate breakfast cookies. I mean, who wouldn't want to start their day off with a few chocolate chips?

I came across a recipe on Pinterest that had mixed reviews, but mostly offered what I was looking for: no butter and low sugar. I tried it out as written and, like many of the reviews said, the outcome was dry and tasteless so I decided it needed a bit of tweaking. To further reduce the carb count and improve the nutrition profile, I replaced the whole wheat flour in the original recipe with almond and coconut flours (if you're in the US, I highly recommend buying these at Trader Joe's!), I also doubled the number of eggs to increase the moisture content and chewiness of the final product, and added vanilla and a touch of salt for flavor.

Suffice to say, my cookies are not only better, they are more nutritious and filling to boot. A batch of these means my husband has a nutritious breakfast before work all week! When compared to America's (and Phoebe Buffay's) favorite yellow packaged chocolate chip cookie dough, these have fewer calories, 1/3 the carbs (and nearly half the net carbs), and more than two times the protein. Compare the nutrition profile for two cookies:

Give them a try! These cookies are the perfect way to start off a busy morning and go equally well with a glass of milk or cup of coffee. Bake a batch on Sunday and you'll have breakfast all week. Happy baking!

Ingredients:
2 eggs
¼c applesauce
¼c peanut butter
1t pure vanilla extract
2T brown sugar (*see tip)
1c oats
½t baking soda
¼t salt
½c almond flour (*see tip)
2T coconut flour (*see tip)
¼c semi-sweet chocolate chips

Instructions:
  1. Line 2 sheet pans with parchment paper or non-stick silicone baking mats and pre-heat oven to 350𝆩F.
  2. Whisk together oats, almond flour, coconut flour, salt, and baking soda.
  3. Using a hand mixer or stand mixer, whip together applesauce, peanut butter, and brown sugar until fluffy.
  4. Add eggs and vanilla extract to peanut butter mixture and whip until fully incorporated.
  5. Add dry ingredients to wet and mix until just combined.
  6. Stir in chocolate chips.
  7. Using a small cookie scoop, dispense dough onto sheet pans and flatten slightly with the back of a spoon (*see tip).
  8. Bake for 8-10 minutes or until cooked.
  9. Allow cookies to cool for 5 minutes before transferring to cooling rack and/or devouring.
Tips:
  • To make this recipe Paleo-friendly, replace the brown sugar with 2T of coconut sugar (also available at Trader Joe's) or 1T maple syrup.
  • If you aren't worried about gluten content or don't have almond and coconut flour on hand, these cookies come out just fine with ½c all purpose or whole wheat flour. (This obviously changes the nutrition profile, but still makes a relatively healthy cookie).
  • To make medium-sized cookies, measure out two balls of dough with the small cookie scoop, roll them together in your palms to make a single ball, and flatten slightly with the back of a spoon. Medium-sized cookies require a 2-5 additional minutes in the oven, but be sure to keep a close eye on them!
